Appetizer is a first course of menu like SOUP

When you making a soup before must be known about stock. What is stock?
Stock means meat or meat bone, fish or fish bone with aromatic vegetable and lemon juice boiling in the
water that's called of STOCK.
Stock is the base of soup so, lets up firstly we make stock after then make SOUP...

How to make of  STOCK?

Ingrediaents:
Meat or meat bone..............500 gms
Aromatic vegetable.............300 gms
Water.......................................2 ltrs
Methods of preparation:
- Put water in a medium large pot using high heat
- Bring to boil after reduce heat
- Add meat or meat bone
- Add aromatic vegetable( Carrot, Onion, Celery etc)
- Boiled 4 to 6 hours in simmering heat
- Drain well and resurved liquid
- Stock can use hot or cold

So our STOCK is ready now we make SOUP. Moor than thousands kinds of soup in the world but all soup's base is STOCK.......mind it.

                                                                       
CREAM OF CHICKEN SOUP



Recipe Name: CREAM OF CHICKEN SOUP

Ingredients:
        Quantity:
                Tools & Utensils:
Butter
Flour
Chicken stock
Salt
Pepper
Fresh cream
Boiled dice chicken

1500 ml
To taste
To taste
100 gm
150 gm
Kitchen knife
Chopping board
Whisk
Pan
Strainer
Wooden spoon
Soup laddle

Method of preparation:

ü  Melt the butter on a pan & add the flour, make white roux.
ü  Add chicken stock and mix nicely by whisk.
ü  Add salt, pepper and bring to the boil.
ü  Strain the liquid and re boil.
ü  Add the fresh cream, Adjust consistency and seasoning.
ü  Add the boil dice chicken. Cook 2 to 5 minutes.
ü  Serve hot.
